Weekendmarkets, IslandEastMarket andGreenQueen
Market, the cityhas started embracingan eating culture that
prioritieshealth, community, sustainability–andabove all –a
truepassion for food.

BreadElementsbelieves that it’s important todifferentiate
between fads and longevitywithin industry, and that foodhas
tobeof quality, rather than relyingonmarketingalone.Their
bread ismade locallyusing traditional sourdoughmethods
without chemicals,which is kinder to thedigestive system.He
alsohasmaintains adeep respect of the existing food culture,
saying, “We can’t compare theHongKongmarketwith
overseasbecause it has itsown identityand that’swonderful.”
HoweverMichaudagrees thatweekendmarkets are the
better choice, asofferings tend tobehandmade, organic
and local, asopposed to themajorityof importedproducts.
He says, “Supermarket offerings are limited to the same20
fruits andvegetables all year longand can includeheavyuse
of pesticides. Farmers shoulddictatewhat is sold inmarkets
according to the season, but instead today this isdictatedby
consumerdemand.”
